Fast and Fancy Chicken

4-8 chicken breasts, skinned and boned
8 oz Swiss cheese, sliced
1/2 lb fresh mushrooms, sliced
1 can cream of mushroom soup
1/4 cup dry white wine
2 cups low-sodium herbed stuffing mix (or herbed bread crumbs)
1/4 cup melted butter
Instructions
In a 9x13 inch baking dish, place chicken breasts in a single layer. Top each with cheese slices. Sprinkle mushrooms over the cheese. In a bowl, combine mushroom soup and wine, then pour over mushrooms. Sprinkle stuffing mix over the top and drizzle with melted butter. Bake at 350°F, uncovered, for about 35 minutes or until chicken is cooked through. Optional: Add a couple of rosemary sprigs on top for flavor.
