Lasagna Soup

Ingrédients

1 lb ground italian sausage

1/2 onion, diced

3 cloves garlic, minced

1 tbsp oregano

1 tsp basil

salt and pepper, to taste

24 oz marinara sauce

32 oz chicken broth

1 c diced tomatoes

1/2 lb pasta

1 c heavy cream

1/2 c ricotta

1 c mozzarella, shredded

Instructions

Brown sausage in a large sauce pot. Drain and set aside. - 1 lb ground italian sausage

Add onion to the pot and sauté on medium heat. Once translucent, add in garlic, oregano, basil, marjoram, salt, and pepper. Cook for an additional minute. - ½ onion diced - 3 cloves garlic minced - 1 tbsp oregano - 1 tsp basil - 1 tsp marjoram (optional) - 1 tsp salt and pepper to taste

Mix in cooked sausage, marinara, broth, and diced tomatoes. Cover and let sauce come to a simmer. - 24 oz marinara - 32 oz chicken broth - 1 c diced tomatoes

Add in pasta and cook al dente according to box directions. - 2 c pasta

Mix in heavy cream, ricotta, and mozzarella. Taste and adjust seasonings accordingly. - 1 c heavy cream - ½ c ricotta - 1 c mozzarella shredded

Scoop into a bowl and garnish with ricotta and fresh basil.
