Buttermilk Biscuits

1 1/2 cups all-purpose flour
1/2 cup cake flour
1 tbsp baking powder
1/2 tsp salt
1/2 cup butter
3 tbsp honey
3/4 cup buttermilk
Instructions
Preheat oven to 415F
In a large bowl, sift together AP flour, cake flour, baking powder & salt.
In a small bowl, add buttermilk first, then honey. Whisk together until completely combined and set aside.
Using a pastry cutter, cut cold butter into the flour mixture until the butter is pea-sized and crumbly.
Slowly add the buttermilk mixture to the flour mixture and mix only until the flour mixture is moistened. Do not over mix.
Lightly flour a flat surface with cake flower and pour the dough and remaining dry crumbles onto the surface and gently fold together until combined. Lightly dust the top of the dough with flour and fold in half, gently patting it into a rectangle. Continue dusting the dough and folding 5-6x, and gently pat the final rectangle into a shape about 6x9" and about 1" high.
Using a sharp biscuit cutter, cut out biscuits and bake on a nonstick metal baking sheet or cake pan for 15 minutes, or until the tops are golden brown.
