Ingrédients

Olive Oil

1 lb ground turkey

2 green peppers

½ sweet onion

3 cloves garlic

1 can diced tomatoes

½ c quinoa

1 c. water or broth

1 T Italian seasoning

½ c. shredded mozzarella

Instructions

Instant Pot:

Set instant Pot to Saute and brown turkey, peppers, and onions in Olive Oil.

Add remaining ingredients except cheese and stir.

Set Instant Pot to Pressure to 8 minutes.

Natural release for 10 minutes (or so).

Stir in cheese until it melts.

Stove top:

Increase water by at least 1/2 cup. Stir frequently and watch carefully. Simmer for 15-20 minutes or until quinoa is cooked and water is absorbed.
