Cape Malay Chicken Curry

20oz of Chicken breast
3 tbsp vegetable oil
1 large onion
1 medium tamoto
5-6 patatoes
3 cardamom pods
1 green chilli
1 tsp cumin
2 tsp curry masala
1 tsp turmeric
1 tsp fennel
1 tsp chilli powder
1 1/2 tsp salt (LOVE)
A few curry leaves
Fresh coriander leaves
Instructions
Braise onions until they are soft and golden brown.
Add tomato and green pepper and garlic, simmer for 10 minutes.
Add cumin, coriander, fennel, chilli powder, turmeric and curry masala, simmer for 15 minutes over low heat.
Parboil potatoes for later.
Cut chicken into bite sized pieces and cook til nearly done.
Add chicken and simmer for 10 minutes.
Add potatoes and simmer for 5-10 minutes. Garnish with fresh coriander leaves.
Serve with roti.
