Nomi’s Tortilla Soup

Ingrédients

1/2 cup finely chopped onion

3 cloves garlic

1/2 tsp salt

3 lbs chicken breasts

1 chopped red pepper

1 can sweet white corn

1 chopped green pepper

2 zucchini or squash

2 chopped carrots

3/4 tsp basil

1 tsp oregano

Corn tortillas cut in strips

2 cups Monterey Jack cheese

Instructions

Boil chicken breasts with onion, salt, and garlic until tender. Remove breasts from water and chop. Stir 3 bouillion cubes into water and add 2 cans diced cooked tomatoes.

Stir vegetables into water. Add chicken and cook 30 minutes

Add basil & oregano

Cook for 10 additional minutes. Cut corn tortillas into narrow strips. Fry in small amount of oil.

Serve soup with tortilla strips and grated Monterey Jack cheese.
