Low Carb Lasagna Soup

1 large zucchini or eggplant, sliced into lasagna noodles
1 lb ground beef
½ white onion, diced
½ cup diced celery
1 tsp garlic powder
1 tsp onion powder
1 tsp crushed red pepper
1 tsp italian seasoning
Salt and pepper to taste
1 tbsp tomato paste
1 jar low sugar marinara
1 ½ cup @kettleandfire chicken bone broth (discount code: LOWCARBLOVE)
1 cup low fat ricotta cheese
Instructions
In a dutch oven or stock pot, cook your ground beef until brown. Season with salt and pepper.
2 Add your onion and celery and add the rest of your seasonings - garlic powder, onion powder, crushed red pepper, tomato paste and saute until cooked through.
Add your low sugar marinara and chicken broth until your soup thickens up.
Add your lasagna noodles and ricotta and stir for 1-2 mins.
