Stir Fry Noodles With Beef

Quick & Easy Beef Stir-Fry with Rice Noodles
Beef Marinade:
500g rump steak, thinly sliced
1 tbsp freshly minced garlic
1 tbsp freshly grated or minced ginger
1 tbsp mirin
1 tbsp light soy sauce
1 tbsp arrowroot powder (or cornstarch)
1 tbsp white or brown sugar (optional)
Cracked black pepper (optional)
1/4 tsp baking soda
A drizzle of oil
Stir-Fry:
400g rice noodles
1 brown onion, sliced
4 spring onions, chopped
2 tbsp dark soy sauce
2 tbsp oyster sauce (or substitute with tamari or light soy sauce)
1 tbsp light soy sauce
Bean sprouts (optional)
Sesame oil (optional)
Instructions
Combine all the marinade ingredients in a bowl with the beef. Mix well and set aside for 10–15 minutes.
Prepare the rice noodles by pouring boiling water over them and letting them sit for 2–4 minutes until soft. Drain.
Heat a large pan or wok over high heat. Add the marinated beef, onions, and spring onions. Stir-fry until the beef is cooked through.
Add the noodles, dark soy sauce, oyster sauce, and light soy sauce. Toss everything together until combined.
Remove from heat, serve immediately, and enjoy a quick, flavorful dinner that’s way better than takeout!
