Washington School Inn Waffles

Ingrédients

1 1/2 cups all-purpose flour

1 1/2 cups buttermilk

6 tablespoons butter, melted

2 large eggs, beaten lightly

2 teaspoons vanilla

1/2 tablespoon baking powder

1/2 teaspoon baking soda

1 teaspoon cinnamon

1 teaspoon salt

Instructions

Preheat your waffle iron. In a large bowl, whisk together dry ingredients (flour through cinnamon). In a medium bowl, whisk together buttermilk, butter, eggs, and vanilla. Add wet ingredients to dry ingredients; blend gently until only small lumps remain (batter will be thick). Spoon 1/4 to 1/2 cup of batter into waffle iron depending on its size. Top with your favorites, including Vermont maple syrup.

Note: If you don’t have buttermilk, take 1 1/2 cups milk and add 3 tablespoons lemon juice or white vinegar. Let it stand for about 10 minutes; it should thicken.
