Instructions

Cut a deep X into an unpeeled red onion without going all the way through. Pry apart slightly and jam in a pat of butter and a rosemary sprig, plus salt, pepper, and a drizzle of olive oil.

Wrap in foil; grill until the onion is squishy, 25 minutes or so at high heat, more if the heat's low. Think melt-in-your- or so at high heat, more if the heat's low. Think melt-in-your-mouth caramelized onions, perfect with whatever you're grilling.
