Zucchini Bread

3 eggs
2 1/4 c sugar
2 c + zucchini, unpeeled- grated
1 c vegetable oil
3 c flour
1 t salt
1 t baking soda
1 t cinnamon
3 t vanilla
1 c nuts (optional)
Instructions
In large bowl, blend together eggs, sugar, zucchini.
Add remaining ingredients and mix.
Bake at 350°: 75 min for (2) 9 “ loaf pans or 60 min for (3) small loaf pans
