Mom’s Colony Mountain Chili

Ingrédients

1 pound ground beef

1 pound hot Italian sausage

2 tbsp olive oil, divided

1 onion, chopped

3 garlic cloves, minced

2 green onions, sliced

2 tsp beef bouillon cubes

1 cup boiling water

1 can tomato paste (6 oz)

3 tbsp chili powder

2 tbsp brown sugar

2 tbsp Worcestershire sauce

2 tsp cumin

1-2 tsp crushed red pepper flakes

1 tsp salt

½ tsp pepper

3 cans stewed tomatoes (14.5 oz)

2 cans pinto beans (15 oz), rinsed and drained For serving: shredded cheese, cilantro, sour cream

Instructions

DIRECTIONS

1. In a large skillet, brown the beef and sausage, then drain. Transfer meat to a 5-quart crockpot.

2. In the same skillet, sauté the onion, garlic, and green onion until tender. Transfer to the crockpot.

3. In a small bowl, dissolve bouillon cubes in water. Stir in the tomato paste, chili powder, brown sugar, Worcestershire sauce, and seasonings until blended. Add to crockpot, then stir in tomatoes and beans.

4. Cover and cook on high for 6-8 hours or until the meat is tender.
