Chicken Alfredo Pasta

400g Chicken Breast (4 chicken breasts trimmed)
250g Linguine
1 onion
2 cloves garlic
200ml of heavy cream
2 tbsp flour
180ml pasta water
hanful grated mozzarella
salt
pepper
paprika powder
garlic powder
herbs
dried parsley
chives
Instructions
Prepare the Chicken:
Cut the chicken breasts into fillets. Lightly oil them and season with paprika, garlic, black pepper, salt, and Italian herbs. Rub the seasoning into the chicken.
Cook the Chicken:
In a heated pan, cook the chicken until fully done. Once cooked, remove the chicken from the pan and set aside.
Sauté the Onion and Garlic:
In the same pan, melt the butter and sauté the diced onions until soft and translucent. Add the minced garlic and sauté for another minute.
Boil the Pasta:
While the onions and garlic are sautéing, bring a pot of water to a boil and cook the pasta according to package instructions. Reserve about a cup of pasta water before draining.
Make the Sauce:
After the garlic is sautéed, add the flour to the pan and combine. Slowly pour in the heavy cream while whisking. Season with salt and pepper to taste. Gradually add the reserved pasta water to loosen the sauce if needed.
Combine the Pasta and Sauce:
Once the sauce has thickened, add the drained pasta to the pan and mix well. Stir in the shredded mozzarella cheese until melted and creamy.
Add the Chicken(and Serve):
Slice the cooked chicken into the pasta mixture, garnish with chopped chives, if desired, and serve.
