Cheeseburger One-Pot Pasta

1 tablespoon olive oil
1 lb (450g) 95% lean ground beef
1 yellow onion, chopped
¼ cup (60 g) ketchup
2 tablespoons pickle juice from jarred hamburger pickle slices
1 tablespoon yellow or Dijon mustard
1 teaspoon onion powder
1 teaspoon sweet paprika
½ teaspoon garlic powder
Kosher salt and black pepper
¾ lb (340 g) dried rotini pasta
1½ cups (170 g) finely grated Cheddar or Cheddar-Colby blend
¼ cup (40 g) whipped cream cheese
½ cup (170 g) roughly chopped hamburger pickle slices

Put the oil in the Instant Pot®, select Sauté, and adjust to More/High heat. When the oil is hot, add the ground beef and onion and cook, breaking up the meat into 1-inch (2.5-cm) chunks with a spatula, until the beef is browned, about 5 minutes. Press the Cancel button.
Add 3 cups (700 ml) water, ketchup, pickle juice, mustard, onion powder, paprika, garlic powder, ¾ teaspoon salt, and ¼ teaspoon pepper to the pot, stirring with a wooden spoon to scrape up any browned bits. Add the pasta and toss to coat.
Lock the lid in place and turn the valve to Sealing. Press the Pressure Cook button and set the cook time for 5 minutes at low pressure.
When the cooking time is up, turn the valve to Venting to quick-release the steam. Carefully remove the lid. Add half of the Cheddar and all of the cream cheese and stir with a rubber spatula until the cheese has melted. Sprinkle with the remaining Cheddar and the pickles and serve.
