Spicy Korean-style Cheesy Chicken

1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
1 tablespoon soy sauce
1 teaspoon gochugaru (Korean chili powder)
1 teaspoon garlic powder
1/2 teaspoon ginger powder
1/4 teaspoon black pepper
1 tablespoon cornstarch
2 tablespoons vegetable oil
1/4 cup gochujang (Korean chili paste)
1/4 cup honey
2 cloves garlic, minced
1 tablespoon soy sauce
1 tablespoon rice vinegar
1 cup shredded mozzarella cheese

Marinate the Chicken: In a bowl, combine the chicken, soy sauce, gochugaru, garlic powder, ginger powder, black pepper, and cornstarch. Marinate for at least 30 minutes, or up to overnight.
Cook the Chicken: Heat the vegetable oil in a large skillet over medium-high heat. Add the marinated chicken and cook until browned and cooked through.
Make the Sauce: In a small bowl, whisk together the gochujang, honey, minced garlic, soy sauce, and rice vinegar.
Combine Sauce and Chicken: Pour the sauce over the cooked chicken and stir to coat.
Add Cheese: Top the chicken with shredded mozzarella cheese.
