Carne En Su Jugo Recipe

1 lb bacon, cut into small pieces (center-cut, if possible)
1 ½ lbs beef bottom round, cut into bite-sized pieces
1 chile guero (or substitute with other mild chiles)
A small bunch of cebollitas (green onions, or cebollitas cambray if you can find them)
Fresh cilantro, roughly chopped
Salt (about 2.5 teaspoons, adjusted to taste)
Black pepper
1 teaspoon garlic powder
1 serrano pepper
1 jalapeño
4-5 tomatillos
2-3 cups cooked beans (optional)
1 cup water

Start by heating a pan over low heat and add the bacon, cooking slowly. For extra crispy bacon, add a splash of water to help render the fat. Once the bacon is crispy, remove it from the pan and set it aside.
In the same pan with the bacon fat, add the cebollitas and chile guero. Let them blister a bit, then remove and set aside. Drain most of the bacon grease, but leave a little in the pan for the beef.
Add the beef to the pan, and season with 2 teaspoons of salt, plenty of black pepper, and 1 teaspoon of garlic powder. Stir well and cook until the beef begins to release its juices.
In a blender, combine green onions, 1 serrano, 1 jalapeño, and tomatillos. Blend until smooth. Pour the sauce over the beef, stir, and add 1 cup of water to the blender to catch any remaining sauce. Pour this in, too. Taste for salt and adjust as needed.
Add the chile guero, cebollitas, cilantro, and beans (if using) to the pan. Cover and let everything simmer for about 20 minutes.
Serve your Carne en su Jugo hot, maybe with a side of tortillas or rice. Enjoy!
