Tabouli (Jamie Small’s Grandma Josie’s Recipe)

Ingredients
2 Cups of # 2 Cracked Bulgur Wheat
3 Bunches of Parsley, Finely Diced
3 Bunches of Green Onions, Diced
3 Large Tomatoes, Diced
6 Lemons (you will want at least 1 cup of
1 Cup of Extra Virgin Olive Oil juice)
1 Cucumber, Diced
1 Bunch of Fresh Mint, Diced
Ground Allspice
Salt & Pepper
Upute
1) Rinse Bulgur Wheat with cold water and allow time to drain, then place bulgur wheat into a large mixing bowl.
2) Chop Parsley, Green Onions, Tomatoes, Mint & Cucumber and place in a large mixing bowl.
3) Squeeze the lemons until you have a 1 Cup of lemon juice. Mix olive oil, lemon juice, allspice, salt & pepper with a whisk and then pour into the large mixing bowl
Transfer into an airtight container and refrigerate.

Tips
1) When adding the chopped tomatoes, add in the juice as well.
2) I will sample the dressing before adding to ensure the seasoning is right, depending on the season I may add more lemon or additional seasoning
