Creamy Spinach and Lemon Orzo Bake

1 1lb. box orzo pasta
2 tablespoons olive oil
1 medium onion, chopped
4 large cloves garlic, minced
10 ounces fresh spinach, roughly chopped
1 cup heavy cream
1 cup broth (for vegetarian, use Better Than Bouillon Vegetarian No Chicken. Otherwise, use Better Than Bouillon Chicken or chicken Broth)
2 lemons
1 teaspoon salt
½ teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 1/2 cup grated Parmesan cheese
1 cup breadcrumbs
2 tablespoons fresh parsley, chopped

1. Cook Orzo Pasta according to package instructions until al dente, then drain (saving a cup of the pasta water), rinse with cold water, and set aside.
2. While Orzo is cooking, dice the onion, mince the garlic, and roughly chop the spinach, zest and juice the lemon.
3. Preheat oven to 375°F.
4. In a large skillet, heat olive oil over medium heat; add chopped onion and sauté until translucent.
5. Stir in minced garlic and fresh spinach; cook until the spinach wilts.
6. Add heavy cream, broth, lemon zest, lemon juice, and spices; stir and bring to a gentle simmer. Taste and add more spices as needed.
7. Stir in the cooked orzo and half of the grated parmesan cheese until combined. If too dry, add some of the saved pasta water.
8. Combine breadcrumbs with remaining parmesan cheese and set aside.
9. Transfer the orzo mixture to a greased baking dish and top with remaining breadcrumb and parmesan mixture..
10. Bake in the preheated oven for 20-25 minutes, or until golden and bubbly.
11. Garnish with fresh parsley before serving.
