Strawberry Shortcake Cheesecake Bars

For the Cookie Crust:
20 Strawberry Shortcake Oreo cookies
3 tablespoons unsalted butter, melted
For the Strawberry Cheesecake Filling:
12 large strawberries (fresh or frozen, thawed)
16 oz cream cheese, softened
½ cup granulated sugar
2 tablespoons all-purpose flour
¼ teaspoon salt
1 teaspoon vanilla extract
2 large eggs
12 Strawberry Shortcake Oreo cookies, divided

Prepare the Crust
Preheat your oven to 325°F (160°C).
Line an 8-inch square baking pan with aluminum foil, leaving an overhang on two sides for easy removal. Lightly spray with cooking spray.
Place 20 Oreo cookies in a food processor and pulse into fine crumbs.
Add melted butter and pulse until combined.
Press the crumb mixture evenly into the bottom of the pan.
Bake for 10 minutes, then remove from oven. Leave the oven on.
Make the Cheesecake Filling
Blend the strawberries in a food processor until smooth (you should get about ¾ cup of puree). Set aside.
In a mixing bowl, beat the softened cream cheese until smooth and fluffy (about 1 minute).
Add the sugar, flour, salt, and vanilla extract, and mix until well combined.
Add the eggs one at a time, beating after each addition.
Stir in the strawberry puree until the mixture is smooth.
Assemble and Bake
Pour the cheesecake batter over the baked crust and smooth the top.
Crumble 8 Oreo cookies and sprinkle them evenly over the top.
Bake at 325°F (160°C) for 35–40 minutes, or until the edges are lightly golden and the center is set but slightly jiggly.
Remove from the oven and let cool completely. Refrigerate for at least 2 hours.
Serve
Use the foil overhang to lift the cheesecake out of the pan.
Crumble the remaining 4 Oreo cookies on top.
Slice into bars and enjoy!
