HONEY CHIPOTLE CHICKEN QUESADILLAS

INGREDIENTS

• 40oz Chicken Breast (1135g) • 2.5 Cups Cottage Cheese (0% Fat) (560g) • 1 Cup Red Enchilada Sauce (240g) • 1 Can Chipotle Peppers (7oz) (200g) • 3 Tbsps Garlic Salt (45g) • 3 Tbsps Onion Powder (22g) • 3 Tbsps Smoked Paprika (22g) • 3 Tbsps Honey (60g) • 6.75 Cups Fat Free Mozzarella (750g) • Cilantro (Optional) (30g) • 10 Low Calorie Tortillas (10-inch Carb Counter)

Petunjuk

1. To a blender, add cottage cheese, red enchilada sauce, and 2 chipotle peppers. Blend until completely smooth. Set aside.

2. To a large bowl, add 40oz of chicken breast. Season with garlic salt, smoked paprika, onion powder, the remaining chipotle peppers (diced), and some honey. Mix everything until the chicken is evenly coated.

3. Air fry the chicken at 375F (190C) for 15-20 minutes or bake at 400F (205C) for 20-25 minutes.

4. After cooking, the chicken rest for a few minutes and then dice it up into small pieces.

5. In a clean bowl, add the diced chicken, the chipotle sauce made in Step 1, 1.75 Cups fat- free mozzarella, and some cilantro. Mix until everything is combined.

6. Assemble the quesadilla by spreading 0.5 Cup of cheese and 1/10 of the sauced chicken mixture onto a low calorie tortilla and then folding it over. Repeat 9 more times to make a total of 10 quesadillas.

7. Toast the quesadillas in a pan on both sides until golden brown, wrap in aluminum foil and freeze for up to 3 months (go to page 4 for reheating instructions).
