BUTTER CHICKEN BURRITOS

• 1.5 Cups Greek Yogurt (0% Fat) (340g)
• 2 Tbsps Light Butter (30g)
• 0.5 Cup Diced White Onion (100g)
• 1 Cup Diced Canned Tomatoes (240g)
• 1.5oz Cashews (Or Cashew Butter) (42g)
• 1.5 Cups Dry White Rice (270g)
• 3 Cups Water (720g) • 0.5 Cup Diced Cilantro (40g)
• 10 Low Calorie Tortillas (Carb Counter)

DIRECTIONS
1. Dice up 60oz of chicken breast into 1-inch pieces. Transfer to a bowl.
2. To the chicken, add 1 Tbsp each of garam masala, turmeric, salt, smoked paprika, minced garlic, and minced ginger. Add 0.5 Cup Greek yogurt and mix it all together.
3. Cover the bowl with plastic wrap and let the chicken marinate for 30 minutes while we do the rest of the prepping.
4. Combine 1.5 Cups white rice and 3 Cups water. Bring to a simmer for about 15-20 minutes until the rice is cooked.
5. To a pan, add 2 Tbsp of light butter and 0.5 Cup diced white onions. Let it cook for 3-5 minutes on medium heat until the onions are translucent.
6. When the onions are done, add 1 Cup diced canned tomatoes, and 1 Tbsp each of minced garlic, minced ginger, garam masala, turmeric, smoked paprika, and salt. Also add 1 Cup of Greek yogurt and 1.5oz cashew nuts.
7. Stir everything together and bring to a light simmer for 3-5 minutes.
8. Add everything in the pan to a blender and blend until completely smooth.
9. Remove the chicken from the marinade and cook in a pan on high heat until it's almost done. Add the sauce made in Step 8. Bring everything to a light boil. 10. Assemble the burritos with a low calorie tortilla, about 1/10 of the rice, 1/10 of the butter chicken, and some diced cilantro. 11. Roll everything into a burrito and repeat the process 9 more times to make a total of 10 burritos. Wrap in aluminum foil and store in the freezer for up to 3 months (go to page 6 for reheating instructions).
