16-ounce pound cake (Cheaper is better, they hold up to the soak)

Cheesecloth

9” rectangular loaf pan

Rum/Coffee Soak:

5 T rum

1 ¼ cup strong espresso

5 t sugar

5 T water (I use Kaluha instead)

Chocolate Filling:

4 eggs

1 t sugar

6 oz semi-sweet chocolate

Frosting:

1-cup heavy crème

1 t confectioner’s sugar

Fresh raspberries

Petunjuk

Separate eggs and beat yolks with 1 t sugar. In top of double boiler, melt chocolate slowly, add a bit of chocolate to eggs to temper, then add the rest, mixing rapidly. Beat egg whites into stiff peaks. Add a spoon full to chocolate mixture, mixing well, then gently fold into the chocolate.

Place damp cheesecloth to line loaf pan. In a small bowl, combine rum/coffee soak. Slice pound cake and soak piece by piece. Line bottom and sides of loaf pan. Spoon filling into pan. Add a top layer of pound cake. Wrap up and cover with foil. Freeze or let set up 24 hours ahead. Place on dish. Cover with whipped crème and berries
