Coconut Lime Chicken with Rice

For the Chicken:
1 ½ lbs boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
1 (13.5 oz) can full-fat coconut milk
¼ cup lime juice (from about 2-3 limes)
2 cloves garlic, minced
1 tablespoon grated fresh ginger
1 teaspoon ground cumin
½ teaspoon turmeric powder
¼ teaspoon red pepper flakes (optional, for heat)
Salt and freshly ground black pepper, to taste
1 tablespoon olive oil or coconut oil
Fresh cilantro, chopped, for garnish
Lime wedges, for serving
For the Rice:
1 ½ cups long-grain white rice
3 cups water or chicken broth
½ teaspoon salt

Prepare the Chicken:
In a medium bowl, whisk together the coconut milk, lime juice, minced garlic, grated ginger, cumin, turmeric, red pepper flakes (if using), salt, and pepper.
Add the chicken pieces to the mixture and toss to coat evenly. Let the chicken marinate for at least 15 minutes, or up to 30 minutes at room temperature. If marinating longer, refrigerate it.
Cook the Rice:
Rinse the rice under cold water until the water runs clear.
In a medium saucepan, combine the rinsed rice, water or chicken broth, and salt.
Bring it to a boil over high heat. Once boiling, reduce the heat to low, cover, and simmer for 18-20 minutes, or until the liquid is absorbed and the rice is tender.
Remove from heat and let it sit, covered, for 5-10 minutes. Fluff the rice with a fork before serving.
Cook the Chicken:
Heat the olive oil or coconut oil in a large skillet or wok over medium-high heat.
Remove the chicken from the marinade, letting excess drip off (reserve the marinade).
Add the chicken to the hot skillet in a single layer. Cook for 3-5 minutes per side until golden brown and cooked through.
Pour the reserved marinade into the skillet with the chicken. Let it simmer for another 5-7 minutes, stirring occasionally, until the sauce thickens slightly.
Taste the sauce and adjust seasoning with salt and pepper if needed.
Serve:
Serve the Coconut Lime Chicken over the fluffy rice.
Garnish with fresh cilantro and serve with lime wedges on the side for extra zing.
