HONEY CHIPOTLE CHICKEN BURRITOS

INGREDIENTS
• 60oz Chicken Breast (1700g) • 1 Can Chipotle Peppers (7oz) (200g) • 3 Tbsps Honey (Optional) (60g) • 2 Tbsps Garlic Salt (30g) • 1 Tbsp Onion Powder (7g) • 1 Cup Cottage Cheese (0% Fat) (225g) • 1 Cup Tomato Sauce (240g) • 4 Garlic Cloves (15g) • 0.5 Cup Fat Free Milk (120g) • Fresh Chives (20g) • 1 Cup Dry White Rice (180g) • 2 Cups Water (480g) • 5 Cups Fat Free Mozzarella (560g) • 10 Low Calorie Tortillas (10-inch Carb Counter)
Petunjuk
1. To a slow cooker, add 60oz of chicken breast, 2 Tbsps garlic salt, 1 Tbsp onion powder, 1 can of chipotle peppers (save 2 peppers for later), and 2 Tbsps honey for a little added sweetness.
2. Mix everything until the chicken is coated. Cover and cook on high for 3-4 hours
3. In a blender, combine 1 Cup cottage cheese, 1 Cup tomato sauce, the chipotle peppers we saved, about 4 garlic cloves, a pinch of garlic salt, 0.5 Cup milk, and 1 Tbsp honey. Blend until smooth, cover it with plastic wrap, and set aside until the chicken is ready.
4. Combine 1 Cup of dry rice with 2 Cups water (or chicken bone broth). Bring to a light simmer, cover it, and cook for about 15 minutes until the rice is soft.
5. Once the chicken is done cooking, drain the slow cooker of the remaining liquid and shred up all of the chicken.
6. To the chicken, add the sauce made in Step 3, along with some fresh chives. Mix it all together.
7. Assemble the burritos with a low calorie tortilla, about 1/10 of the rice, 1/10 of the chicken, and 0.5 Cup mozzarella.
8. Roll everything into a burrito and repeat the process 9 more times to make a total of 10 burritos. Wrap in aluminum foil and store in the freezer for up to 3 months (go to page 6 for reheating instructions).
