KOREAN CHICKEN FRIED RICE

INGREDIENTS
• 60oz Chicken Breast (1700g) • 5 Tbsps Corn Starch (40g) • 2 Tbsps Garlic Salt (30g) • 1.25 Cups Frozen Veggies (Peas, Carrots, Corn) (215g) • 7 Large Eggs (560g) • 50oz Day-Old Cooked White Rice (1420g) • 7 Tbsps Soy Sauce (105g) • 1.25 Tbsps Sesame Oil (18g) • Sesame Seeds (30g) (Optional) • Fresh Green Onions (20g) (Optional)
Korean Chicken Sauce: • 10 Tbsps Soy Sauce (150g) • 10 Tbsps Water (150g) • 2.5 Tbsps Rice Vinegar (38g) • 2.5 Tbsps Gochujang Paste (40g) • 5 Tbsps Honey (100g) • 1 Tbsp Red Pepper Flakes (8g) (Optional)
Petunjuk
DIRECTIONS
1. Take out 60oz of chicken breast and dice it into 1-inch cubes. Put the meat into a bowl and add in garlic salt and corn starch.
2. Mix the chicken together until all of the pieces are evenly coated.
3. Spray the coated chicken with oil and air fry at 400F (205C) for 10-12 minutes or bake at 400F (205C) for 15-17 minutes.
4. In a bowl, combine soy sauce, water, rice vinegar, Gochujang paste, honey, and some red pepper flakes if you want to add a little spice (Optional).
5. To a hot pan, add the sauce created in Step 4. Simmer for around 3-5 minutes until it thickens up a little. Add in the cooked chicken and toss it in the sauce.
6. Add 1.25 Cups frozen veggies to a pan and cook them for 3-5 minutes.
7. Push the cooked veggies to one side of the pan. Add 7 beaten eggs to the opposite side of the pan.
8. Slowly scramble the eggs. After cooking, combine them with the veggies.
9. To the same pan, add 50oz of day-old cooked rice, 7 Tbsps soy sauce, 1.25 Tbsps sesame oil, and mix everything up until combined. 10. Take out 10 meal prep containers, add 1/10 of the total fried rice, and 1/10 of the total cooked chicken to each one (you can do this by weighing each one and dividing the weight by 10). 11. (Optional) Top each meal with sesame seeds and fresh green onions. 12. Store the containers in the freezer for up to 3 months (go to page 5 for reheating instructions).
