SUPER EASY BOILING METHOD

1. Rinse 1 cup of Kiwi Quinoa thoroughly under cold water using a fine mesh sieve until the water runs clear. 2. Add the quinoa to a saucepan and cover with 5 cups of water. Cover with a lid. 3. Bring to the boil then reduce the heat to a simmer for approximately 20 minutes or until the tails of the quinoa release. 4. Strain any excess water and rinse. Serves 4.

COOK BY ABSORPTION METHOD

1. Rinse 1 cup of Kiwi Quinoa thoroughly under cold water using a fine mesh sieve until the water runs clear. 2. Add the quinoa to a saucepan and cover with 3 cups of water. Cover with a lid. 3. Bring to the boil then reduce heat to a simmer for approximately 20 minutes until tunnels form in the quinoa (or until the tails of the quinoa release). 4. Remove from the heat, set aside to steam covered for five minutes before fluffing with a fork. Serves 4.

RICE COOKER METHOD

1. Rinse 1 cup of Kiwi Quinoa thoroughly under cold water using a fine mesh sieve until the water runs clear. 2. Place the rinsed quinoa in the inner pan of the rice cooker and cover with 3 cups of water. Cover with lid. 3. Set the rice cooker to “cook”. 4. Once cooking is completed turn rice cooker off and quinoa is ready to serve. Alternatively keep the lid on for 15 minutes, allowing the quinoa to be steamed fluffy by the remaining heat.

SOAK

This is a wonderful way of preparing quinoa and results in a deliciously chewy grain. For the few extra minutes spent preparing, it’s well worth the benefits of a more nutritious and easily digested grain. We came across this in my favourite cookbook “Homegrown Kitchen” by Nicola Galloway. 1. Combine 1 cup quinoa with 3 cups of warm water (approx. 45 degrees) and 1 tablespoon of whey, yoghurt, kefir, apple cider vinegar or lemon juice in a large bowl. 2. Allow to soak in a warm place for 8-12 hours. 3. To cook, drain and rinse the quinoa using a fine mesh sieve until the water runs clear. 4. Add the quinoa to a saucepan and cover with 1 ¾ cups boiling water, stock or bone broth. 5. Cover with a lid and bring to the boil. Reduce the heat to a simmer for approximately 15 minutes or until the tails of quinoa release. 6. Remove from the heat, set aside to steam covered for five minutes before fluffing with a fork. Serves 4.

SPROUT

Kiwi Quinoa is whole grain and has not been processed, polished, heat treated or tampered with in any way. This means that it’s a living seed and can be sprouted. Sprouting quinoa increases the availability of nutrients, increases the vitamin and mineral content and makes the quinoa easier to digest. We love adding quinoa sprouts to coleslaw or a fresh green salad and sandwiches for that crunchy freshness - and extra goodness! Here’s how we sprout our quinoa to make approximately 1 cup of sprouted quinoa. 1. Place ⅓ cup of quinoa in a bowl with 2 cups of water. 2. Allow to soak for 8 hours. 3. Strain the quinoa and rinse thoroughly using a fine mesh sieve. 4. Leave the quinoa in the sieve and place over a bowl and cover the quinoa with a plate to keep out of direct light. 5. For 2 days, rinse the quinoa in the sieve with cold water 2-3 times per day. The quinoa will begin to sprout and once the tail is about 1cm long it’s ready to eat. 6. Place sprouts in an airtight container and store in the fridge. Use within 5 days.
