2 tbsp olive oil

2 chicken breasts, cut into 1-inch pieces

2 cups chicken broth

1 cup rice

2 tablespoons freshly squeezed lemon juice

2 teaspoons lemon zest

1 teaspoon dried oregano

1 teaspoon dried rosemary

1 teaspoon dried thyme

½ teaspoon salt

1 cup cherry tomatoes, quartered

1 cup crumbled feta cheese

½ cup Kalamata olives

Chopped fresh parsley, for topping

1. Prepare the skillet. In a large skillet over medium-high heat, heat the oil.

2. Cook the chicken. Add the chicken and cook for 3 to

5 minutes, or until golden brown; it does not need to be cooked through at this point.

3. Add the seasonings. Stir in the broth, rice, lemon juice, lemon zest, oregano, rosemary, thyme, and salt.

4. Cook the rice. Bring the mixture to a boil, reduce the heat to maintain a simmer, and cover the skillet. Cook for 15 to 17 minutes, or until the broth is absorbed and the rice is cooked.

5. Finish. Top with the tomatoes, feta cheese, olives, and parsley.
