Fried Green Tomatoes

4 medium green tomatoes

sea salt

2 eggs

1 cup (75g) gluten free bread crumbs

1 cup (80g) finely grated parmesan cheeses, plus extra for garnishing

2 tbsp extra virgin olive oil, plus more if needed

30g (2 tbsp) butter

freshly ground black pepper

Istruzioni

Remove the stem end of the tomatoes, then cut into 1cm-thick slices. Place the tomatoes in a single layer on a baking tray and sprinkle both sides generously with salt. Leave for about 30 minutes until they are covered in beads of moisture, then dry on paper towel.

Break the eggs into a wide shallow bowl of plate and lightly whisk. Combine the crumbs and parmesan in another shallow bowl.

Preheat the oven to 50ºC and place an ovenproof platter into the oven to warm.

Dip each tomato slice in the the egg, letting any excess drip off, then coat in the crumb mixture, pressing gently to ensure the crumb mixture sticks. Place on a baking sheet.

Heat a large shallow frying pan over medium-high heat, then add half the olive oil and butter. When the butter has melted and stopped foaming, add enough tomato slices to cover the base of the pan in a single layer. Leave for a few minutes until you can see that the bases of the tomatoes are starting to brown, then shuffle gently to ensure they are not sticking. Turn when the base is golden. When the other side is golden (about 2-3 minutes), transfer to the oven to keep warm while you cook the remaining slices. Wipe out the pan and add more oil and butter before you cook the next batch.

Serve the tomatoes warm, sprinkled with extra parmesan, sea salt and a good grind of black pepper.
