4 sticks of butter softened

fresh sage

fresh rosemary

fresh thyme

12-15 garlic cloves minced

Istruzioni

1. Thaw turkey in refrigerator depending on the size of your turkey (google it)

2. Monday night, brine turkey according to instructions on brine

3. Remove and reserve neck and giblets. Place in a plastic bag and store in refrigerator.

4. Wednesday morning, remove turkeys backbone and extra fat around neck and tail and use this to make the turkey gravy. Follow turkey gravy recipe.

5. Make compund butter by mincing very finely all the herbs and beating butter and herbs in mixer until well blended and fluffy.

6. Set butter aside on the counter covered. Keep room temp.

7. Place turkey on a grate and pan and return to fridge to dry out.

8. Thursday pull turkey out an hour before you want to cook it.

9. Start the smoker and aim for 275-325 degrees.

10. Take half the compound butter and rub under skin all over the turkey and rub all over the outside of the turkey both backside and front.

11. Starting with the underside, season with the turkey rub and then spellbound. Flip over, and repeat.

12. Smoke turkey until it reaches 165 in breast. Spray with avocado oil periodically

13. Let rest for 10 minutes

14. Melt compound butter in saucepan.

15. Slice turkey and pour melted compound butter over top.
