3-4g active dry yeast
550g water
30g olive oil
30g water
60g water
150g poolish preferment
(75g flour, 75g water, .3g yeast mixed and covered for 10-14 hours at room temp)
25g salt
Istruzioni
Mix flour and yeast
Add 550g of water slowly
Add 30g olive oil
Once mass forms, add poolish
Add 30g water and continue to mix
Add 25g salt
Continue mixing and add 60g of water
Mix until smooth and dough temps between 74-78f.
Rest for 1 hour, covered
Remove from bowl and section off 6 - 300g dough balls
Put dough balls, covered in containers for 24-48 hours in the fridge
Remove dough from fridge and rest room temp for 3-4 hours before cooking
