Veggie Niçoise-Style Sandwiches with Roasted Carrots

2 Small Baguettes

3/4 lb Carrots

1 Persian Cucumber

2 oz Sliced Roasted Red Peppers

1 oz Pitted Niçoise Olives

2 oz Fontina Cheese

1 Tbsp Whole Grain Dijon Mustard

2 Tbsps Mayonnaise

1 Tbsp Capers

1 Tbsp Weeknight Hero Spice Blend (onion powder, garlic powder, smoked paprika, whole dried parsley)

Istruzioni

Prepare & roast the carrots

Preheat the oven to 450°F.

Fill a medium pot 3/4 of the way up with water; cover and heat to boiling on high.

Wash and dry the fresh produce.

Peel the carrots; halve lengthwise, then cut crosswise into 2-inch pieces.

Line a sheet pan with foil.

Place the carrot pieces on the foil. Drizzle with olive oil and season with salt, pepper, and enough of the spice blend to coat (you may have extra). Toss to coat.

Roast 15 to 17 minutes, or until browned and tender when pierced with a fork.

Remove from the oven.

Prepare the remaining ingredients

Meanwhile, halve the baguettes.

Grate the fontina on the large side of a box grater.

Roughly chop the capers.

Roughly chop the olives.

Roughly chop the peppers.

Thinly slice the cucumber into rounds.

In a bowl, combine the grated fontina, chopped capers, and mayonnaise; season with salt and pepper.

In a separate bowl, combine the chopped olives, chopped peppers, and mustard.

Cook & slice the eggs

Carefully add the eggs to the pot of boiling water and cook 9 minutes for hard-boiled.

Drain thoroughly and rinse under cold water 30 seconds to 1 minute to stop the cooking process.

When cool enough to handle, carefully peel the cooked eggs, then thinly slice.

Toast the baguettes & serve your dish

Meanwhile, place the halved baguettes on a sheet pan, cut side up. Drizzle with olive oil; season with salt and pepper.

Toast in the oven 7 to 9 minutes, or until lightly browned and crispy.

Transfer to a work surface.

Assemble the sandwiches using the toasted baguettes, fontina spread, olive-pepper mixture, sliced cucumber, and sliced eggs.

Serve the sandwiches with the roasted carrots on the side. Enjoy!
