BANANA OAT PROTEIN BARS

2 medium ripe bananas, mashed

1/2 cup pure maple syrup

1/2 natural peanut butter

1 teaspoon vanilla extract

2 cups rolled oats

2 tablespoons olive/coconut oil

1/3 cup vanilla protein powder

1/3 cup dark chocolate chips

1/3 cup chopped walnuts, optional

Preheat oven to 170 degrees C (fan-forced) and line a square or rectangular slice tin with baking paper. Set aside.

In a large bowl, combine bananas, maple syrup, peanut butte, oil and vanilla extract and mix until combined.

Then add rolled oats, protein powder, chocolate chips and nuts (if using). Mix well until combined.

Press mixture into prepared slice tin and top with additional chocolate chips if desired. Bake for 20-25 minutes until golden brown. Allow to cool in the tray and then slice into bars. Enjoy!

Store in the fridge for up to 5 days, or in the freezer for up to 3 months.
