Ginger Beef Lettuce Wraps

Ingredientai

For the beef

  • 1lb ground beef (or other meat)

  • 3-5 inches of grated ginger, to taste

  • 2 Tbsp soy sauce

For the veggies

  • 4 cloves garlic, minced

  • ¼ cup rice vinegar

  • ¼ cup soy sauce

  • 2 Tbsp fish sauce

  • 2 Tbsp honey

  • 1 tsp sesame oil

  • Pinch of red pepper flakes

  • Few Tbsp olive oil

  • 1 medium onion, diced

  • 1 zucchini, diced

  • 1 small head broccoli, chopped

  • Large handful peanuts

For the wraps

  • 2 cups cooked rice (OR pre-made coconut rice, see recipe elsewhere in this app)

  • 1-2 heads of butter, green leaf, or romaine lettuce, ends trimmed

  • ½ cup cilantro, roughly chopped (optional for garnish)

Cook rice (basmati, jasmine, or whatever) according to package instructions OR coconut rice goes great with this recipe. Keep warm when finished.

For the beef:

  1. Cook ground meat over medium-high heat until browned, making sure to crumble the beef as it cooks.

  2. Add grated ginger and soy sauce and cook about 1 minute until heated through. Keep warm.

For the veggies:

  1. In a small bowl, whisk together the minced garlic, rice vinegar, soy sauce, fish sauce, honey, sesame oil and red pepper flakes.

  2. Heat oil in skillet over medium-high heat and cook onion and zucchini until softened. Add broccoli and peanuts, cooking until broccoli begins to soften.

  3. Turn heat to low, add sauce from step 1, and allow to simmer a few minutes.

For the wraps:

In each lettuce leaf, add a large spoonful of rice, spoonful of beef, and spoonful of veggies. Garnish with cilantro if desired.
