Triple Layer Chocolate Mousse Cake

Ingredienser

1 envelope unflavored gelatin

2 tbsp cold water

¼ cup boiling water

1 cup granulated sugar

½ cup unsweetened cocoa

2 cups (1 pint) heavy cream, chilled

2 tsp vanilla

Fremgangsmåte

In a small bowl, sprinkle gelatin over cold water. Let stand 1 minute to soften. Add boiling water and stir until gelatin is completely dissolved and mixture is clear. Cool slightly. In a large chilled bowl, stir together sugar and cocoa. Add heavy cream and vanilla. Mix at medium speed, beat until stiff peaks form. Pour in gelatin mixture; beat until well blended. Refrigerate about 30 minutes before frosting cake. Makes about 4 cups of mousse.
