Dessert fondues
When preparing a chocolate fondue, always follow the recipe directions. It may be necessary to put water into the fondue pot under the insert before it is placed on the burner, thereby creating a water bath (bain-marie) which prevents the chocolate from burning. Dessert fondues can be cooked in liqueurs, juices, and cream.
Although chocolate and orange are classic partners, almost any fruit can be used in these fondues. Chunks of banana, pineapple, peach, kiwis, nectarine, and plum, and whole raspberries, strawberries, and cherries are all delicious. These fondues can also be served with plain biscuits, macaroons, cookies, lady fingers, pound cake and marshmallows.
Dessert wines and liqueurs are preferable with these fondues. If one of them is used in the fondue itself, you can serve it, for example on the rocks, with the dish.
