Chicken Caesar Smash Tacos

For the Tacos:

1 lb. ground chicken

8 small tortillas (corn or flour, use gluten-free if needed)

2 cups chopped romaine lettuce

1 teaspoon garlic powder

1/2 teaspoon salt

1/2 teaspoon black pepper

Parmesan cheese (optional, for serving)

Lemon wedges (optional, for serving)

For the Dairy-Free Caesar Dressing:

1/2 cup mayonnaise (use vegan mayo for an egg-free option)

1-2 anchovy fillets, finely minced or mashed into a paste

1 tablespoon fresh lemon juice

1 tablespoon Dijon mustard

1 teaspoon Worcestershire sauce (ensure it’s dairy-free)

1 clove garlic, finely minced or grated

1/4 teaspoon salt (adjust to taste)

1/4 teaspoon black pepper

Fremgangsmåte

In a small bowl, whisk together the mayonnaise, anchovy paste, lemon juice, Dijon mustard, Worcestershire sauce, minced garlic, salt, and black pepper.

Taste and adjust seasoning if needed. Set aside.

Preheat a skillet or griddle over medium-high heat.

Take each tortilla and place a scoop of the raw chicken in the center and evenly spread it over the tortillas, ensuring it reaches the edges.

Season the chicken with salt, pepper, and garlic powder.

Using a spatula or the bottom of a pan, press the tortilla (chicken side down) onto the hot skillet, smashing the chicken into it.

Cook for about 2-3 minutes per side, until the tortilla is golden and slightly crisp.

Top each taco with chopped romaine lettuce and a sprinkle of Parmesan cheese (if using) then drizzle the dairy-free Ceasar dressing on top.

Garnish with a squeeze of fresh lemon juice for added brightness.

Serve immediately and enjoy these flavorful, crunchy Caesar Salad Smash Tacos!
