Ingredienser

• Olive oil

• 2 large onions, diced

• 3 tbsp (42g) berbere spice

• 5-6 cloves garlic, minced

• fresh ginger, grated (at least half the quantity of garlic)

• 1 tsp (2g) coriander

• 1 tsp (2g) cumin

• 3 tsp (6g) smoked paprika

• 400g lentils, soaked for at least 2 hours

• 2 tbsp (28g) tomato paste

• 950ml vegetable broth (2 stock cubes)

• Fresh coriander, chopped

• Salt and pepper to taste

Fremgangsmåte

• Heat a large pot with oil, then add onions, berbere spice, garlic, ginger, cumin, coriander, and smoked paprika. Stir occasionally for 2-3 minutes until the onions are translucent.

• Then add the soaked lentils and tomato paste. Stir and sauté for 2-3 more minutes. Add stock or water and season with salt.

• Bring to a boil and let it simmer until it thickens. It might take about 30 minutes, depending on how you like your lentils. Throw in some coriander, adjust for salt and pepper, and adjust the stew's consistency.
