Feta Baked Eggs

100g feta (half a block)

6 eggs

Olive oil or spray

Salt and pepper

Fremgangsmåte

Preheat oven to 200°C

Lightly grease an ovenproof dish with olive oil or cooking spray.

Place the feta in the centre of the dish, then crack in the eggs. Season with salt and pepper (ps. Add extra flavour by sprinkling chili flakes, herbs, or a drizzle of hot honey before baking)

Bake for 12-15 minutes, or until the eggs are just set.

Remove from the oven and mash with a fork.

Serve immediately or store leftovers in the fridge for up to 3 days.
