Whipped Paprika Tofu with Roasted Veggies

Ingredienser

Oven:

4 small potatoes, diced

1 can chickpeas, drained

1 small onion, chopped

2 cloves garlic

Rosemary & dill

Olive oil

Salt & pepper

½ bell pepper, (red paprika)chopped (keep separate to blend with tofu!)

Whipped Paprika Tofu:

1 block tofu

¼ cup nutritional yeast

½ cup plant milk

1 tbsp olive oil

Splash lemon juice

Salt, pepper, garlic powder

Extras (optional, but highly recommended 😏):

Chili oil

Veggie cream

How to make it:

Oven at 180°C (350°F). Toss potatoes, chickpeas, onion, garlic, rosemary & dill with olive oil, salt & pepper. Place bell pepper on the side (not mixed in). Bake 15-20 min.

Blend the roasted bell pepper with tofu, nutritional yeast, plant milk, garlic powder, salt & pepper until smooth.

Spread the whipped paprika tofu on a plate, top with roasted veggies.

Drizzle with chili oil & veggie cream and enjoy!
