Grape Leaves

Stuffing for 1 jar:
1.5 cups medium grain rice, soaked in hot water for 15 minutes
1/4 head finely diced garlic
1 3/4 Tbsp diced parsley, no stems
1/2 Tbsp diced mint
1/2 cup diced red tomatoes (Roma is my go-to tomato)
2 Tbsp olive oil
3/4 Tbsp lemon juice
1/2 tsp salt
1/2 tsp ground ginger
1/2 tsp turmeric
1/4 tsp black pepper
Stuffing for 2 jars:
3 cups medium grain rice, soaked in hot water for 15 minutes
1/2 head finely diced garlic
3 1/2 Tbsp diced parsley, no stems
1 Tbsp diced mint
1 cup diced red tomatoes (Roma is my go-to tomato)
4 Tbsp olive oil
1 1/2 Tbsp lemon juice
1 tsp salt
1 tsp ground ginger
1 tsp turmeric
1/2 tsp black pepper
Pot Prep:
Slices of garlic in between leaves
1/2 jalapeño slices in between leaves
Sliced onion on bottom of pot w/ some garlic
Over top of leaves:
1/2 lemon squeezed over leaves
1 Tbsp salt
1 Tbsp olive oil
Ginger powder
1-2 tomatoes slices on top
Generous amount of tomato paste
Instructies
Rinse jarred grape leaves off in the sink. Depending on the brand, the grape leaves may come with little stems on them. Pinch these off before stuffing them. Fill each grape leaf with stuffing and roll up. DO NOT OVER STUFF!! If the grape leaf is too full it will burst when cooking.
Place larger leaves at bottom of pot, smaller on top of pot
Throughout filling the pot, place slices of garlic and slices of 1/2 - 1/4 of a jalapeño between rolled leaves. When you have rolled all of the leaves, squeeze 1/4 a lemon over top. 1/2 Tbsp salt, and about 1 Tbsp of olive oil sprinkled over top too. Add a sprinkling of ginger powder over top too. Lay tomato slices on top and add a generous amount of tomato paste. Add a few slices of garlic and a few slices of onion.
Add warm water to pot until just barely covered. Place onto stove uncovered and turn to med/high heat until water starts to boil. When the water starts to boil, smush down leaves w/plate or a smaller lid. Turn heat down to med/low and cover pot with a lid. Leave undisturbed.
One jar of grape leaves will cook for roughly 45 - 60 min.
Two jars will cook for about 90 min.
To check if the grape leaves are done. Fish a grape leaf out and check the rice. When the rice is soft all the way through, it is done. If it is overcooked, it will fall apart easily. If it its falling apart, picking it up with tongs will have better success than spearing it with a fork. When the grape leaves are done, give the pot a little shake to separate the leaves from each other a bit.
