Cucumber Pasta Salad

Ingrediënten

1/2 pound rotini pasta

1 english cucumber (seeded & sliced into half moons, about 3 cups)

1/2 red onion (diced, about 1 cup)

1 cup Plain Greek Yogurt

1 tablespoon white wine vinegar

1 tablespoon lemon juice

2 tablespoons dill (chopped)

1/2 teaspoon garlic powder

Instructies

In a large pot of salted water, cook the pasta according to package instructions. Once cooked, drain the pasta and rinse it with cool water to cool it down.

In a small bowl, whisk together the dressing ingredients including the plain greek yogurt, lemon juice, white wine vinegar, dill and garlic powder.

Add the cooked, cooled pasta, cucumber, and red onion to a bowl. Toss together with the dressing.

Serve immediately or put in the fridge for up to an hour to let the flavors combine.
