2 bunches of green onion (finely chopped)
3-4 tomatoes (chopped small)
1 bunch cilantro (stemmed and minced)
3-4 potatoes (I usually half 2 russets or use 4 yellow potatoes)
4 portions of chicken (pork or beef works too, browned)
1 sachet of Goya Azafran (can also use saffron/tumeric/paprika)
1qt of chicken stock (can also use water but I like to add bouillon)
Instructies
Chop onions and tomatoes and add to pan with butter, sauté for 6-7mins seasoning with salt and pepper, stir in azafran sachet, then leave to simmer for another 5-10mins.
In a medium sized pot, brown off the meat and add the potatoes and slowly add the cooked veggies to cover and slowly add stock/water (really just enough to cover the potatoes, try not to wash the veggies off the meat and potatoes) bringing to a boil. Cover and lower heat to medium low and let it simmer until the potatoes are cooked.
Add minced cilantro 5min before finishing cooking and stir in.
Notities
I like to use stock or add a bouillon cube to the water (be sure to taste the mix before leaving it to simmer, it will concentrate a little, but not much since covered)
I like to make mine with extra veggies compared to the norm
Can also make without the cilantro (for soap people)
Can always enrich the recipe with some (coconut) cream, I would add it about the same time as the cilantro
For even more veggies...I imagine you could mix in spinach 10 min before serving or add bell peppers to the original veggie mix.
I almost always serve over white rice
