MAPLE LIME AND

CHILI MARINADE

2 Tablespoons olive oil

2 Tablespoons lime juice

1-2 Tablespoons maple syrup, to taste

1 teaspoon kosher salt

1 teaspoon chili powder

3 cloves garlic, minced

ROASTED GARLIC AND

HERB MARINADE

3 heads roasted garlic, cloves squeezed out and smashed (see note)

¼ cup fresh dill, chopped,

OR 6 frozen dill cubes

¾ cup fresh parsley, chopped, OR 12 frozen parsley cubes

1½ teaspoons kosher salt

½ teaspoon ground black pepper

1 (2-3-lb) London broil

Instructies

Prepare the marinade: Combine all ingredients forya of marinade in a large ziplock bag.

Add London broil; seal bag. Marinate in the fridge tor 13 2

until ready to cook.

Turn oven to broil. Place London broil into a roasting can 3

discard any remaining marinade. Broil on high for 6-8m per side, until a meat thermometer shows an internal temperature of 130°F for medium rare. (Cook it for more time, depending on your personal preference. This cont done on a grill pan as well.

Notities

PLAN AHEAD

London broil can be frozen in the marinade.

Defrost fully, then cook according to directions. London broil can be cooked 1-2 days ahead of time. For best results, serve at room temperature to avoid overcooking. If you prefer to serve it warm, undercook the meat a bit so it doesn't become overcooked and dried out while being reheated

NOTE

To roast heads of garlic, slice the tops

off to expose cloves. Sprinkle cloves with olive oil, kosher salt, and ground black pepper. Wrap tightly in foll ban at 400°F for 40-50 minutes, until golden brown. Make some extra to serve alongside the steak, too!
