Jam Crumble Cups

JAM CRUMBLE CUPS
Cook time: 10 minutes + 2 hours in fridge to set
About 24 cups
1 cup rolled oats
1 cup oat flour (blitz rolled oats in food processor, or grind by hand)
2 tablespoons coconut oil
1/3 cup peanut butter (or subo ther nut or seed butter)
1/3 cup pure maple syrup
jam of choice
Instructies
In a large bowl, combine oats, oat flour, maple syrup, coconut oil and peanut butter. Mix until well combined. Mixture should stick together when pressed. If too dry, add more peanut butter. If too wet, add more oat flour.
Press a tablespoon-sized amount of crumble mixture into the bottom of each well of a 24-cup mini muffin pan. Press firmly. Add a very small dollop of jam to each muffin well, then add a sprinkle of crumble mixture over the top.
Place in the fridge for 30 minutes to set. Then remove carefully from tray and store in an airtight container in the fridge for up to 5 days. Can also freeze for up to 3 months.
