Blueberry and Lemon Dutch Baby

4 eggs
1/2 cup milk
1/2 cup all purpose flour
1 teaspoon vanilla
1/4 teaspoon salt
3 tablespoons sugar
2 tablespoons melted butter
1 lemon (zested)
Instructies
1. Preheat oven to 450°F
2. Blend all ingredients until smooth
3. Melt 2 additional tablespoons of butter in an oven safe skillet
4. Once melted (and foaming) add 1 cup of blueberries and immediately add batter
5. Bake at 450°F for 15 minutes
6. Serve immediately
Notities
I think it works best with fresh fruit. I tried once with frozen and it still cooks and puffs, its just not as pretty.
I like to top with powdered sugar and serve with whipped cream.
Works well with GF flour (Either Red Mill AP* or Almond flour)
