Have you ever tried these delicious cheesy goodness potatoes?? It’s to die for. Lol see what I did there?

Thanks to @mindi_2.0 for sending us this recipe!! So every family has their own variation of funeral potatoes. Here’s mine:
1 bag of shredded hash browns (about 20 ounces?) frozen
16 oz shredded sharp cheddar
8 oz shredded Monterey Jack cheese
1 stick of softened butter (salted)
8 oz sour cream (full fat!! No “light” sour cream)
1 can of cream of chicken soup (full fat)
Dehydrated onions to taste (I use 3-4 cap fulls from the bottle so maybe like 0.5-0.75 cups?)
Crushed corn flakes as crunchy topping layer (as generous as you please here)
Salt & pepper to taste (I go heavier on the pepper)
Instructies
Mix all ingredients except for the cornflakes in a bowl. Pour the mixture into a casserole dish and sprinkle crushed corn flakes on top. Cover with foil and bake in the oven for 20 minutes at 350°F, then uncover and bake for an additional 10-20 minutes. You want to watch for the casserole to be bubbling around the sides.
Variations:
Add diced ham or bacon
Substitute cream of potato for the cream of chicken
Ritz crackers instead of cornflakes
Cream cheese instead of sour cream
Shredded cheese layer on top instead of cornflakes
Sliced potatoes instead of shredded
Fried onions instead of dehydrated onions
