HEALTHY CARROT CAKE MUFFINS

Ingredients:
About 12 muffins
1 1/2 cup self-raising flour
1 1/2 teaspoons cinnamon
1/4 teaspoon nutmeg
1 cup finely grated carrot (about
2-3 carrots)
1/2 cup pure maple syrup
1 ripe mashed banana (or sub 1/3
cup unsweetned pureed apple)
1 egg
2 tablespoons olive oil or other
neutral oil
1 teaspoon vanilla extract
1/2 cup milk (any)
Instructies
Preheat oven to 180 degrees C (fan-forced). Line a 12-cup muffin pan with liners and spray the inside with nonstick cooking spray to prevent batter from sticking to the liners, or use silicone liners.
In a large bowl, add carrots, maple syrup, banana, egg, oil, vanilla and milk. Whisk to combine. Add flour, cinnamon and nutmeg, and slowly stir through until mixture is just combined. Don’t overmix otherwise muffins will be dense instead of fluffy and soft.
Fold in shredded coconut, sultanas, or chopped nuts, if you'd like. Divide batter between muffins cups and bake for 18-20 minutes or until toothpick inserted into the middle comes out clean. Enjoy!
Store in the fridge for up to 5 days, or in the freezer for up to 3 months.
