Peri Chicken Garlic Folded Flatbreads

Thin slices of peri chicken are piled onto a homemade garlic flatbread, with cheese, lettuce, tomato and perinaise. Brushed with garlic butter for the finishing touch👌🏼 only 511 calories and nearly 47g protein per flatbread! 🫶🏼

Ingredients (serves 2):
200g thinly sliced chicken breast
1 and ½ tsp peri seasoning
Tbsp lemon juice
110g self raising flour
120g fat free authentic greek yoghurt
10g light butter
Tsp chopped garlic
A couple sprigs of fresh parsley chopped
2 half fat cheddar slices
2 slices of tomato
30g peri mayonnaise
50g shredded lettuce
Instructies
Start by seasoning the chicken breast in a bowl with the peri seasoning and lemon juice. Mix together and set to one side.
Whilst the chicken marinades, in a bowl, mix together the self raising flour, greek yogurt and salt. Once most of it is clumped together, use your hands to mould into a ball. Then split into two.
Push out into a circular shape using your hands, then roll out further.
Next, add the chicken to a pan and cook for around 8 minutes until cooked through and remove from heat.
Heat a large pan and add each rolled out dough into the pan (I did these in two separate pans to speed it up). Pan fry for 8 minutes or so until golden.
Once golden, mix together the butter and garlic and blast for 15 seconds in the microwave. Brush over the bread and flip for 30 seconds.
Remove from heat, and add the cheese slices on one half along with the chicken and tomato. Fold the other half of the flatbread over. Leave over low heat for a couple of minutes until the cheese has melted.
Once the cheese has melted, remove and add the peri mayonnaise along with the shredded lettuce before serving.
