Jalapeno Popper Chicken Bake

Ingrediënten

2 chicken breasts

4 tablespoons butter

Salt, pepper and garlic powder

2 small heads of broccoli, cut into bite-size pieces

3-4 medium jalapenos, diced with seeds

1 green bell pepper, diced

12 oz cream cheese, room temperature

6 oz shredded colby jack

Crispy bacon bits for topping

Instructies

Preheat oven to 350°. Place the chicken in an oven safe dish. Season the chicken with the garlic powder, salt and pepper. Cube the butter and sprinkle over the chicken. Bake in preheated oven for 40-50 minutes until the internal temperature reads 165°. Remove chicken from pan and let rest for 10 minutes. Save the juices in the pan

Increase oven temperature to °375. In a separate oven safe dish add the broccoli, jalapeno and bell pepper. Season with salt and pepper. Drizzle the veggies with the reserved cooked chicken juice. Bake for 10 minutes. Stir and bake for 5 more minutes.

Chop the chicken and add to veggies

Mix the cream cheese and shredded cheese together. Place on top of the veggies and put back in the oven for 5 minutes to soften the cream cheese. Smear the soften cream cheese to cover all the veggies. Sprinkle with bacon bits and reserved cheddar. Bake for 15 minutes and enjoy
