Mirepoix Base Concentrate

1 medium onion(8 oz), finely diced
1 large carrot(4 oz), peeled and finely diced
2 celery ribs (4 oz), finally diced
1 tablespoon butter
½ cup water or broth
Instructies
Melt butter in a sauté pan or skillet over medium-low heat. Add vegetables, adjusting heat to keep them from browning. Cook, stirring occasionally, until soft and translucent, about 10 minutes.
Add water or broth and use an immersion blender to blend into a smooth puree. Portion the puree into ice cubes and freeze. Use as needed in sauces, soups, etc
